Creative Recipes / Restorative Ginger Mint Tea

It is officially fall! The weather is getting crisp and cool and all of a sudden our urges to be out and about have turned into urges to curl up in a blanket and read a book with a hot cup  of tea. We all have our go-to teas that we love, but if you want to change things up this year, try making your own herbal tea from scratch! This recipe uses ingredients found in most grocery stores and tastes fresh and restorative. Tea cups with Ginger and Mint



2 cups fresh ginger root
A generous handful of fresh mint
4 Tbs. honey



In a medium sauce pan, bring 4 cups of water to a simmer. Remove skin of ginger root by scraping it with the side of a spoon or knife and chop finely. Remove mint leaves from talk and chop loosely. Add ginger to water and let simmer for ten minutes. Next, add mint and simmer for 1-2 more minutes. Add honey to taste and serve.
