High-quality black truffle salt provides a base of umami-rich flavor to this blend. The mellow, round mushroom-notes of the truffles are heightened with the taste of natural sea salt.

The black garlic brings in a slightly sweet but clearly savory note with its own unique tang. Black garlic is a traditional preparation important to many Asian cuisines, made by fermenting fresh garlic cloves. The enzymes active through the fermentation process tone down some of the garlic’s harsh or acrid notes and creates deep, some say almost bitter chocolate-like flavors that plays incredibly well with the layers of truffle and parmesan cheese. Black garlic is maybe best described as being deeply, thoroughly caramelized garlic.

The Parmesan cheese adds its own nutty, slightly salty flavor to the blend. It’s a key element in balancing the interplay of the savory truffle flavors with the almost sweet black garlic.

Recipes:


Truffle Parmesan + Black Garlic Crusted Steak

INGREDIENTS:
2 Steaks: Tenderloin or Filet Mignon, at least 1 ½ inches thick; 
    alternatively sirloin, NY strip or strip steak.
½ c F+F Truffle Parmesan + Black Garlic Seasoning
2 Tbsp Butter
2 Tbsp Olive Oil

DIRECTIONS:
1. Place steak on a large cutting board, letting it come to room temperature (about 20 minutes). This will help the steak cook more evenly. 
2. Sprinkle all sides of the steak with F+F Truffle Parmesan + Black Garlic Seasoning, making sure it is generously coated.
3. Heat a large cast iron skillet on the stove over high heat. When the skillet it hot, reduce the heat to medium & add the butter & olive oil. The butter should melt immediately. 
4. Place steaks in the middle of the skillet, not touching. Sear (do not flip them) for 4-5 minutes. Do not move during the searing time. Don’t be tempted to lift to check.
5. After 4-5 minutes, flip each steak & do not move for an additional 4-5 minutes.
6. After 5 minutes, use tongs to lift steaks & sear each edge for 1-2 minutes. Make sure all the edges are seared.
7. Once you have seared the edges, check the internal temperature steak & continue to cook on low until it reaches your desired temperature. Medium to medium-rare is an internal temperature of about 145°F. 
8. Let the steaks rest on a platter for 5-10 minutes before serving.

Truffle Parmesan + Black Garlic Mac & Cheese

INGREDIENTS:
1 lb. Elbow Macaroni 
3 Tbsp Unsalted Butter 
3 Tbsp all-purpose flour
2 c Whole Milk
1 c Heavy Cream 
½ tsp Salt
½ tsp Pepper
⅛ tsp Nutmeg, grated 
3 Tbsp F+F Truffle Parmesan + Black Garlic Seasoning 
4 oz Cream Cheese, softened to room temp 
12 oz White Cheddar, grated
8 oz Gruyère grated 
1 c Breadcrumbs 
2-3 Tbsp Butter, melted
2 tsp F+F All Purpose Seasoning 

DIRECTIONS:
1. In a large pot, boil pasta in generously salted water until al dente. Drain & set aside.
2. In a large saucepan melt butter until bubbling. Add in flour & whisk for 2 to 3 minutes until combined & golden brown. 
3. Slowly whisk in milk & heavy cream, mixing until smooth. Add salt, pepper, nutmeg & F+F Truffle Parmesan + Black Garlic Seasoning. 
4. Add cream cheese & mix until melted & smooth. Add grated cheeses, mixing in until smooth & melted.
5. Pour seasoned cheese mixture onto cooked pasta & stir to combine.
6. Place in individual serving dishes or in a casserole dish.
7. Mix bread crumbs with melted butter & F+F All Purpose seasoning & layer on top of the mac & cheese. 
8. Bake in a preheated oven at 350°F about 30 minutes, until bubbly & golden brown.

Truffle Parmesan + Black Garlic Smashed Potatoes

PREP TIME:  35 Minutes
COOK TIME: 25 Minutes
YEILDS: 4 cups

INGREDIENTS: 
2 lb Red Potatoes (2-inch size works best)
1-2 tsp Olive oil 
4 Tbsp Butter, melted, as needed
1/4 c Fresh Dill, chopped
1-4 Tbsp F+F Truffle Parmesan + Black Garlic Seasoning  
Salt & Pepper 

DIRECTIONS:
1. Place potatoes in a large pot & fill with water until all potatoes are covered. 
2. Lightly salt the water & bring to a boil. Reduce heat & cook until tender, about 15-18 more minutes, depending on potato size. The potatoes should be barley cooked.
3. Drain potatoes & allow them to cool. Lightly toss in olive oil
4. Place potatoes on a sheet tray & use the bottom of a flat glass or measuring cup to crush the potatoes: use additional olive oil to coat the bottom of the glass or cup the bottom of the cup & slowly press until the potatoes are about ¼ inch thick.
5. Air fry crushed potatoes in a single layer at 390°F for 15-20 minutes. Flip potatoes halfway. Alternatively, bake in a preheated oven at 400°F—cook time will be longer)
6. Remove potatoes from air fry & immediately toss with melted butter, dill, F+F Truffle Parmesan + Black Garlic Seasoning, salt & pepper, to taste.

Truffle Parmesan + Black Garlic Popcorn

PREP TIME: 5 Minutes
COOK TIME: 5-10 Minutes

INGREDIENTS: 
3 c Popped Popcorn
1 tsp Olive Oil 
2 tsp Butter, melted
1-3 Tbsp Finch + Fennel Truffle Parmesan + Black Garlic Seasoning 

DIRECTIONS:
1. Prepare popcorn kernels according to package directions, or use pre-popped popcorn. 
2. Melt the butter on the stovetop or in the microwave. Add the olive oil, heating until just warm.
3. Slowly pour onto the popcorn & toss. 
4. Slowly sprinkle in the F+F Truffle Parmesan + Black Garlic Seasoning & toss, tasting as you go, for desired strength. Serve!

Truffle Parmesan + Black Garlic Snack Crackers

INGREDIENTS:
2 Sleeves Saltine Crackers 
2 Tbsp F+F Truffle Parmesan + Black Garlic Seasoning 
½ c Olive Oil
½ c Canola/Avocado Oil 
4 Tbsp Brown Sugar
2 Tbsp Honey 

DIRECTIONS:
1. Place all crackers into a ziplock bag. 
2. Whisk together F+F Truffle Parmesan + Black Garlic Seasoning, oils, brown sugar & honey in a bowl, making sure everything is evenly distributed.
3. Pour spice mixture over crackers in ziplock bag & marinate, ideally overnight or at least 4 hours. The mixture will stick to the crackers & bag. Make sure to gently roll the bag around to distribute to all crackers. You want to try to keep the crackers as whole as possible. 
4. After marinating, place crackers on a baking sheet lined with parchment paper. Scrape from the bag any remaining chunks of seasoning & sprinkle on top of crackers. 
5. Bake at 350°F for about 5 minutes. The sugar burns fast; watch closely and remove from oven when the sugar has begun to melt. Let cool for 20 minutes before serving.

Lobster Mac & Cheese

INGREDIENTS:
1 Full Lobster, uncooked, or 1 c Lobster Meat 
(may also buy pre-cooked lobster or frozen) 
1 lb Elbow Macaroni
3 Tbsp Unsalted Butter
3 Tbsp All-Purpose Flour
2 c Whole Milk
1 c Heavy Cream
½ tsp Salt
½ tsp Pepper
⅛ tsp grated F+F Whole Nutmeg Spice
3 Tbsp F+F Truffle Parmesan + Black Garlic Seasoning
4 oz Cream Cheese, softened
12 oz White Cheddar, grated
8 oz Gruyère, grated

Topping: 
1 c Breadcrumbs
2 tsp F+F All Purpose Seasoning
2 Tbsp Melted Butter

DIRECTIONS:
1. Prepare uncooked lobster by bringing a pot of water big enough to fit the lobster to a boil. Add lobster to the boiling water & place a lid on top. Turn the heat down to a low simmer. Cook for 15-20 minutes, or until the lobster is bright pink.
2. Remove the lobster from the water & allow it to cool. Crack open the lobster & begin to pull out the meat. Chop & set aside.
3. In a large pot, boil elbow macaroni in well-salted water until al dente.
4. In another large saucepan, melt 3 tablespoons of butter until bubbling. Add flour & whisk for 2 to 3 minutes, until combined & golden brown.
5. Slowly whisk in milk & heavy cream until smooth, adding salt, pepper, grated F+F Whole Nutmeg Spice, and F+F Truffle Parmesan + Black Garlic Seasoning.
6. Add cream cheese & mix until melted and smooth. Add cheddar & Gruyère, mixing until smooth & melted.
7. Pour melted cheese mixture onto cooked pasta. Stir to combine.
8. Toss the lobster meat in butter & add half of it to the mac and cheese mixture, reserving some to top, once the mac & cheese is out of the oven.
9. Divide into 6 to 8 lightly greased ramekins or one large casserole dish. Preheat the oven to 350°F.
10. In a separate bowl, stir together breadcrumbs and F+F All Purpose Seasoning. Add 2 tablespoons melted butter & mix well. Sprinkle breadcrumb mixture on top of the macaroni & cheese.
11. Bake at 350°F until bubbly & golden brown, approximately 20-30 minutes.
12. Top with remaining pieces of lobster meat, for added flavor & presentation.

Twiced Baked Potatoes

COOK TIME: 30 minutes
YIELDS: 6 servings 
 
INGREDIENTS:
3 Russet Potatoes, washed 
6 Tbsp Butter, softened
¼ c Milk 
¼ c Sour Cream 
2-4 Tbsp F+F Truffle Parmesan + Black Garlic Seasoning 
1 tsp Salt, or to taste
½ tsp Pepper, or to taste 
1 c Cheddar Cheese
Dill & Diced Green Onion, for Garnish

DIRECTIONS:
1. Gently poke small holes in your russet potatoes with a fork, then microwave them using the potato setting, flipping halfway through. Cook for about 10 minutes, or until they are soft. 
2. Carefully remove hot potatoes from the microwave & set aside to cool.
3. Once the potatoes are cool enough to handle, cut the potatoes in half lengthwise & gently scoop the potato flesh out of the skins and into a large bowl. Mash with a potato masher.
4. Stir in the butter, milk & sour cream. 
5. Add F+F Truffle Parmesan + Black Garlic Seasoning, salt & pepper & mix well.
6. Add half of the cheese to the mixture & stir until incorporated.
7. Spoon the potato mixture evenly into the potato skin halves & top with remaining shredded cheddar cheese.
8. Place the potatoes on a sheet tray & bake in a preheated oven at 350°F for 10-15 minutes, until warmed though.
