Cape Cod Seasoning Rub

Shrimp Boil

PREP TIME: 30 minutes 
COOK TIME: 45 minutes 
YIELDS: 6 servings
 
INGREDIENTS:
8 c Sater
12 oz Beer
½ c F+F Cape Cod Seasoning Rub, additional for serving
½ Tbsp Cayenne Pepper (optional)
2 Bay Leaves
½ Tbsp Kosher sea salt
2 Lemons, halved and juiced
4 Garlic Cloves, roughly sliced
12 Small Red Rotatoes
1 ½ lb Smoked Sausage, cut into 2" pieces
3 Fresh Corn Ears, shucked and halved
2 lb Large Shell-On Shrimp
Tabasco, for serving

DIRECTIONS:
1. Bring water, beer, F+F Cape Cod Seasoning Rub, cayenne, bay leaves, kosher salt, lemon juice, reserved lemon halves & garlic to a boil in large stock pot over high heat. Skim foam from top of pot as it boils. Add potatoes, cover & boil 10 minutes.
2. Add smoked sausage & boil for another 4 minutes. Add corn & continue to boil for 7 minutes. Add shrimp & boil about 3 more minutes, just until shrimp turns pink & is no longer translucent.
3. Immediately drain cooking liquid & discard lemons & bay leaves. Pour contents of pot into large serving bowl or platter, sprinkle with additional F+F Cape Cod Seasoning Rub, if desired, & serve.

Bloody Mary


COOK TIME: 10-20 Minutes
YIELDS: 8 cups

INGREDIENTS:
2 qt Tomato Juice 
Juice of 2 Lemons
1 Tbsp Horseradish, grated 
1 Tbsp Black Pepper 
1-3 tsp Worcestershire Sauce
1-4 Tbsp F+F Fire Roasted Hot Sauce 
1 tsp F+F Cape Cod Seasoning Rub
1-3 oz Vodka 
Sea Salt

GARNISH OPTIONS:
Bacon
Celery
Lime
Olives
Shrimp
Pickles

DIRECTIONS:
1. In a blender, blend together tomato juice, lemon juice, grated horseradish, Worcestershire sauce & black pepper.
2. Season the mixture to taste with your preferred spices & add F+F Fire Roasted Hot Sauce, if you want some heat.
3. Prepare the garnish by cooking the bacon & slicing the limes & celery stems. If desired, prepare toothpicks with toppings & set aside for drink assembly.
4. Prepare the rim of the glass: slice a lime in half & rub it around the rim.
5. Mix together 1 tsp F+F Cape Cod Seasoning Rub & 1 tsp flaky sea salt on a plate or shallow bowl wide enough to dip the rim of the glass into.
6. Once the rim of the glass is coated with lime juice, lightly roll it in the seasoning blend.
7. For each serving, add 1-3 ounces of vodka to a glass filled with ice.
8. Pour 6-8 ounces of the tomato mixture over the vodka & top with premade garnish.

Cape Cod Smoked Salmon

COOK TIME: 30 Minutes
YIELDS: 4-6 Servings

INGREDIENTS:
6-8 oz Salmon Filet
Olive Oil
4-6 Tbsp F+F Cape Cod Seasoning Rub
½ White Onion
1 Lemon

DIRECTIONS:
1. Clean salmon & remove skin, if desired.
2. Apply olive oil to salmon & cover with F+F Cape Cod Seasoning Rub.
3. Let salmon marinate refrigerated, ideally overnight, or for at least one hour.
4. Julienne an onion & lay it down on a parchment-lined sheet tray.
5. Preheat oven to 375°F.
6. Place marinated salmon on top of onions, & bake for 10-12 minutes, or until medium rare.
7. Serve with sliced lemon.

Fried Fish

COOK TIME: 30 minutes
YIELDS: 4 Servings

INGREDIENTS:
8 oz Cod/Halibut, cut into 6 pieces
Peanut or Avocado Oil, for frying
3 c F+F Gluten-Free All Purpose Baking Mix
1 Tbsp Baking Powder
1 tsp Salt
2 Tbsp F+F Cape Cod Seasoning Rub
8 oz Beer, gluten-free or regular
1 Egg
1-1 ½ c Water
Additional Salt & F+F Cape Cod Seasoning Rub, to season fried fish

DIRECTIONS:
1. Cut fish into 6 strips & let them dry on top of a paper towel.
2. Prepare oil or fryer to 350-375°F using peanut, avocado, or other high smoke point oil.
3. Prepare two bowls for breading. In the first bowl, measure 1 cup F+F Gluten-Free All Purpose Baking Mix. In the second bowl, combine 2 cups F+F Gluten-Free All Purpose Baking Mix, baking powder, salt, F+F Cape Cod Seasoning Rub, beer & egg, mixing well. Slowly add hot water to second bowl & mix until batter is at desired consistency, similar to crêpe batter.
4. Roll fish in dry F+F Gluten-Free All Purpose Baking Mix bowl, covering completely; then dunk coated fish into the beer batter, making sure to fully cover it. Drop battered fish immediately into oil or fryer & cook until lightly browned.
5. Once fully cooked, place on a tray with a metal rack to cool & drain.
6. Season with salt & additional F+F Cape Cod Seasoning Rub.
